A lovely little book of recipes for the perfect tea.

COOKIES

BENNE COOKIES
1 cup benne (sesame) seeds
1 1/2 cups firmly packed brown sugar
1 cup all-purpose flour
1/4 teaspoon baking powder
1/4  teaspoon salt
3/4 cup butter or margarine, melted
1 egg
1 teaspoon vanilla

Heat oven to 375 degrees. 

Toast "benne" (sesame) seeds on an ungreased baking sheet until light brown, 10 to 12 minutes. Watch  closely so they don't burn.  Toasting enhances the seeds flavor and makes  them crunchy.

In a large bowl, mix all ingredients. Drop dough by 1/2 teaspoonfuls 1-1/2 inches apart onto a greased baking sheet. The dough will spread, so make sure there is room between drops.  Bake  until light brown, about 4-6 minutes. Cool about 2 minutes before removing from baking sheets  to wire rack to cool completely. Store in tightly covered cookie tin  when thoroughly cooled.

SHORTBREAD
1 cup butter
1/2 cup granulated sugar
2 1/2 cups sifted all-purpose flour

Cream butter and sugar until light and fluffy. Stir in flour and chill two hours. Divide in half.  On a floured surface, roll out the dough so that it is 1/4 inch thick.  Cut in strips 2 inches by 1/2 inch, or use a 2-inch round cookie cutter. Bake on an ungreased cookie sheet at 300 degrees for 30 minutes.  Cool slightly, remove from pan. Makes about 40 cookies.

CUCUMBER SANDWICHES
1 loaf white bread
2 cucumbers, skinned
1 package cream cheese
1/4 cup mayonnaise
1/4 small onion
1/2 tsp salt
4 drops green food coloring

Cut crusts off of white bread and roll flat with a rolling pin.  Scoop out cucumbers and grate.  Grate onion. Crush cream cheese with mayonnaise.  Add salt and food coloring. MIx with cucumbers and onion.  Make sandwiches, cut into triangles and serve.  If you need to store the sandwiches, cover with a damp tea towel and refrigerate.

TEA CAKES
2/3 cup shortening
1 egg
1 cup sugar
4 cups flour
1/2 cup buttermilk
1/2 tsp baking soda
1 tsp vanilla or almond extract

Dissolve baking soda in milk.  Mix all ingredients. Roll very thin.  Cut into shapes and cook at 350 degrees until done.
